Thai Green Fish Curry

Ingredients

  • 2 x table spoons of peanut oil
  • 750g piece of fresh tuna, chopped
  • 2 x medium white onions, chopped
  • 1 x table spoon finely chopped lemon grass
  • 2 x cloves of garlic, crushed
  • 1 x table spoon grated fresh ginger
  • 2 x table spoons green curry paste
  • 1 and 2/3 cups of coconut cream
  • 2 x table spoons lime juice
  • 1 x table spoon thick tamarind concentrate
  • 1 x table spoon chopped fresh coriander leaves
  • 1 cup of bean sprouts
  • 250grams of snow peas, sliced

Method

  1. Heat half the oil in a wok, stir fry the fish in batches until just browned
  2. Heat the remaining oil in the same wok; stir fry the onion, garlic, lemon grass and ginger until the onion is soft
  3. Add the curry paste; stir fry until fragrant
  4. Return the fish to the wok with the remaining ingredients; stir fry, tossing until sprouts are just wilted.

Serves 4
