Marinated Fillet of Beef

The following recipe is taken from the Blanco "Art of Cooking" cookbook, but is suitable for all fan forced ovens.

Combine the following ingredients

  • 1 scotch fillet of beef (about 1.5kg)
  • 1/3 cup Teriyaki Sauce Marinade
  • 1 table spoon finely grated green ginger
  • 1 table spoon dry sherry
  • 1 table spoon honey
  • 2 table spoon brown sugar
  • 1 garlic clove, crushed
  • Freshly ground black pepper
  • 2 table spoon oil

Method

  1.  Remove and discard sinew from fillet. Tie fillet with string to secure shape. Marinate in combined ingredients in the refrigerator for 4 hours.
  2. Remove fillet from marinade, reserve marinade.
  3. Heat oil in a baking dish, add fillet, brown well on all sides.
  4. Bake using Fan Forced function at 190ºC for: 35 minutes for rare, 40 minutes for medium, 45 minutes for well done
  5. Remove fillet from dish, remove string. Keep fillet warm.
  6. Add reserved marinade to pan juices, simmer 5 minutes.
  7. Slice fillet, drizzle with sauce, serve with vegetables.
