
Marinated Fillet of Beef
The
following recipe is taken from the Blanco "Art of Cooking" cookbook,
but is suitable for all fan forced ovens.
Combine the following ingredients
- 1 scotch fillet of beef (about 1.5kg)
- 1/3 cup Teriyaki Sauce Marinade
- 1 table spoon finely grated green ginger
- 1 table spoon dry sherry
- 1 table spoon honey
- 2 table spoon brown sugar
- 1 garlic clove, crushed
- Freshly ground black pepper
- 2 table spoon oil
Method
- Remove and discard sinew from fillet. Tie fillet with string to secure shape. Marinate in combined ingredients in the refrigerator for 4 hours.
- Remove fillet from marinade, reserve marinade.
- Heat oil in a baking dish, add fillet, brown well on all sides.
- Bake using Fan Forced function at 190ºC for: 35 minutes for rare, 40 minutes for medium, 45 minutes for well done
- Remove fillet from dish, remove string. Keep fillet warm.
- Add reserved marinade to pan juices, simmer 5 minutes.
- Slice fillet, drizzle with sauce, serve with vegetables.
