Suzan's - Spinach & Sweet Potato Salad
This is a recipe that you choose the quantities to suit and you could
also change the almonds to pine nuts, it's all a matter of taste.
INGREDIENTS
160g Spinach
600g Sweet Potato
100g Feta Cheese
1/2 Spanish Onion
1/2 cup Slivered Almonds
1/4 cup Pesto
3/4 cup Olive Oil
METHOD
Dice sweet potato ,place on oven tray and spray with oil,bake in
preheated oven
for approx 10 mins on 160degC or till soft ,allow to cool.Toast almonds
Finely slice spanish onion,wash spinach and crumble feta cheese.
Place Spinach, Sweet potato,Spanish onion,Feta and Almonds on platter.
Combine Oil and Pesto mix well, drizzle over salad and serve
immediately.
Salad can be made prior,do not add dressing until ready to serve.
